Studio Null was founded by Dorothy Munholland and Catherine Diao in 2021 with a mission to create the best non-alcoholic wines on the market. This innovative wine is produced by a female-led winemaking trio in central Spain, sourcing organically grown grapes from 80-year-old vines in the dusty, calcareous clay soils of Murcia. The wine undergoes traditional fermentation before being carefully dealcoholized through vacuum distillation, preserving its complex character and structure.
Tasting Notes
A dry blend with a distinctive carbonic bite and lightly sparkling character. Aged for nine months in French oak after fermenting in concrete tanks, creating a savory, round profile with balanced tannins. The wine displays old-world aromas reminiscent of fermented grapes with hints of leather and chocolate. Its unique pétillant technique adds freshness and enhances mouthfeel, making it suitable to serve at room temperature or slightly chilled.
