Pavette, meaning little peacock, is the brainchild of Napa native Rob Fischer and Baron Ziegler (of Banshee wines fame). This wine pulls from several of the most distinct, yet equally stunning AVAs – Anderson Valley, Sonoma Coast, Santa Rita Hills, Santa Rita Highlands, and Carneros – to produce a wine of surprising focus and clarity. The winery's name, Pavette, means "little peacock" and its motto is "always be struttin'".
Tasting Notes
Ripe, bright red fruits of raspberry and Ranier cherry with subtle, savory, woodsy notes. Opens with red cherry and raspberry, with hibiscus following. Supple and fruity, yet more earthy than the nose would lead one to expect, with lush fruit complimented by spice and tea undertones. Subtle notes of cranberry and a hint of pepper linger on the long finish.
Pairs With
Roasted salmon, duck breast with cherry sauce, mushroom risotto, aged goat cheese
