Paul Lato is a Polish-born professionally trained sommelier who worked at Au Bon Climat with Jim Clendenen before starting his own winery in 2002 on California's Central Coast. He brought tremendous passion and innocence to winemaking, sourcing from premium vineyards including Gold Coast, Fiddlestix, Solomon Hills, Zotovich, and Pisoni. This highly acclaimed winemaker creates rich and site-specific pinot noirs with an approach that thinks of wine as food, not drink.
Tasting Notes
The Big Sur cuvée is a blend from some of the Central Coast's most iconic vineyards including Drum Canyon, Zotovich, Peake Ranch, Solomon Hills, Gold Coast, and Hyde Vineyards. The 2018 vintage showed cranberry sauce, spiced blackberries, aniseed, charcuterie and potpourri aromas. This wine style is known for being rich, silky, and vibrant with wines that are delicious at release and able to age, fermented without stems for 16 months in 35% new French Oak. Similar Paul Lato pinots display sharp raspberry jam, herb-dusted potting soil and warm pie-spice aromas, with palates that snap with raspberry and pomegranate fruit flavors layered in peppercorn, tangerine rind and hints of game.
