The Cistercian nuns of Vitorchiano, sixty miles north of Rome, have been quietly crafting exceptional wines on volcanic soils since the early 1990s. When they found themselves making more wine than they could sell in the early 2000s, they partnered with Paolo Bea's son Giampiero, whose renowned Umbrian estate helped connect these devoted sisters to wine lovers worldwide. The nuns maintain their traditional, low-intervention methods with complete faithfulness, creating wines that are both spiritually inspired and terroir-driven.

Tasting Notes

Almond, chamomile, and Asian pear ride a gentle, slender palate, washed with salinity and finishing with a lingering elderflower. Almond blossom and subtle Asian pear mingle with chamomile and kernels on a rainwater-like palate. There's a gentle white and orange fruit sweetness with a nip of salty grip around the edges, giving this wine a lovely slender form. The blend sees extended lees aging for deeper concentration and incredibly expressive minerality.

Pairs With

Grilled seafood with saffron and fennel, fresh pasta with pesto, aged Gouda, salty appetizers
