From one of Chile's most pioneering family wineries, Viña Mayu was founded in 2005 by Mauro Olivier in the pristine Elqui Valley, where the world's clearest skies meet extreme terroir. This remarkable Pedro Ximénez comes from 79-year-old vines at 6,320 feet elevation—some of Chile's highest vineyard sites—where retired Pisco grapes have been transformed into elegant dry wine. Made with Italian winemaker Giorgio Flessati's expertise and aged on lees for refined texture, it showcases the unexpected potential of this Spanish variety in Chile's desert-edge conditions.

Tasting Notes

Fresh and elegant with aromas of green apple peel, pear, white blossom, and lilac. The palate is round and medium-bodied with a supple, fleshy mid-palate and fresh acidity, showing subtle stone fruit flavors alongside distinctive minerality and spice. Pale straw in color with notes of peach and melon, this focused wine offers lots of minerals that will appeal to Grüner Veltliner fans. The finish is long and refined, balancing fruit character with bright acidity and a touch of salinity from the high-altitude terroir.
