Aged at Bodega Las Cruces in Jerez de la Frontera and aged under flor for an average of 4 years, this wine showcases the house's commitment to traditional biological aging methods that have earned them recognition as a world-class benchmark.
Tasting Notes
Pale straw colour with greenish reflections, bright and clean. This is a Jerez style Fino: fresh, mineral and pungent on the nose with almonds and bakery notes. Dry and crisp on the palate, yet rich and with a full finish. The wine tastes first and foremost briny and fresh – but there is also a fruitiness that rounds it out, and a yeasty note from the flor that reminds me of the scent of the bakery around the corner when the croissants come out of the oven. Beautiful, classical Fino nose of chalk, dry hay, dry straw (esparto) and nuts, while the palate is very dry, intense and pungent, long, with a pleasant bitter finish.
