Created by young vigneron Paul Girard, Girard-Bonnet unites the legacy of two historic Champagne families through his parents Philippe Girard and Dominique Bonnet, whose respective holdings in Grand Cru sites were merged to birth this terroir-focused domaine. Now certified organic and biodynamic as of 2023, Paul crafts champagnes that honor both tradition and innovation from their 12 hectares in the prestigious Côte des Blancs.
Tasting Notes
Pours a pale silver-yellow hue with a refreshing, lively nose showcasing bright, savory notes of lemon verbena, crushed stones, and pear, creating an appealing and approachable medium-bodied champagne with a juicy feel and lovely texture. This potent Blanc de Blancs reveals the more savory and phenolic side of Chardonnay, with dried herbs, chamomile, tangerine peel, mint, slate and chalk that literally stain the palate. The wine fills the mouth like a star with sparkling edges yet remains lively and fun, featuring juicy lemon, freshly baked brioche, lovely salinity, and a crisp, chalky finish.
