Now led by young winemaker Eugenio Pastoris, this family estate in Viverone represents the new generation of Piedmont's white wine renaissance. Working organically certified vineyards at the eastern edge of the Caluso zone, Eugenio believes his unique morainic glacier soils give his wines a distinct Alto Piemonte character. His humble approach belies remarkable talent, crafting wines that showcase the rare indigenous Erbaluce grape with precision and purity.

Tasting Notes

Deep straw-colored with wonderful stony minerality and aromatic intensity. The palate reveals white peach, quince, lemon-lime, lingering apple and muskmelon fruits, accompanied by flinty mineral notes, unsweetened honeycomb, bitter almond, white acacia blossoms, thyme and citrus oil. The wine offers a round texture rather than sharp acidity, with a definable saltiness attributed to the high quartz content in the ancient glacial soils. White nectarine, dragon fruit and Bosc pear emerge in a steady, controlled flow of electricity across the palate.

Food Pairings

Grilled sea bass with herbs, risotto with wild mushrooms, roasted chicken with lemon, aged goat cheese
