Jean-Marc Pillot represents the fourth generation of the Pillot family tending vineyards in Chassagne-Montrachet, having joined his father in 1985 and taking over the estate direction in 1991. This outstanding Aligoté comes from a parcel in Remigny planted in 2000, receiving proper élevage in previously used oak barrels for a full year, lending it more complexity and subtler texture than would be achieved with steel aging. This elegant expression offers the characteristically high acidity of Burgundy's 'second white variety,' but with more richness and texture than many of its counterparts—lemony and fresh but not light or boring.

Tasting Notes

Notes of seashell-like minerality complement slightly creamy yet intensely bright fruit. The wine delights with brisk acidity and pure, tensile flavors of preserved lemon, sage, and musk melon. This humble Bourgogne is nimble and easy-drinking, yet displays a modest degree of complexity. The finish reveals a clean mineral persistence that showcases the terroir of Remigny.
