Founded in 1868 in Tsushima City, Chochin Shuzo is a small but revered brewery where master brewer Masayuki Kuwayama crafts each batch with obsessive devotion, using only traditional methods and hand-washing rice. The name "Chochin" means "long cherished rarity," reflecting the family's aspiration to create sake treasured across generations. This exceptional "5055" expression is aged for six months to allow its bold, brash character to mellow into harmonious complexity.
Tasting Notes
Gentle aromas of peach, mango, and cream lead to a palate of tropical fruit juiciness balanced by a bitterness reminiscent of dark chocolate. The full-bodied texture carries bright fruit tones and subtle rice sweetness over a structured core with pronounced dryness and soft acidity. The rich yet composed mouthfeel culminates in a clean, focused finish that highlights its refined balance and continues to evolve beautifully with additional aging.
