From the Calabretta family's vineyards on Mount Etna's volcanic slopes, this Carricante represents old-soul winemaking with modern finesse. Massimiliano Calabretta, inspired by traditional methods yet refined through generations of farming these ancient volcanic soils, crafts just 2,000 bottles annually from 40-50 year old vines planted at 600 meters elevation. The wine ferments with indigenous yeasts and ages in steel tanks, preserving the pure expression of this historic Sicilian varietal.
Tasting Notes
Perfumed and elegant on the nose with fresh lychee, candied grapefruit, and savory Mediterranean herbs, complemented by hints of yellow spring flowers and the barest whisper of volcanic smoke. The palate is refined and medium-bodied with lovely acidity and a distinctive grip that's almost tannic in nature. Flavors of mature lemon rind, ripe yellow apple, and toasted almond lead to a mineral-driven, saline finish that speaks to the wine's volcanic terroir.
Food Pairings
Raw and cooked fish, risotto alla marinara, savory vegetable dishes, white fish preparations
