From Spain's oldest continuously operating family winery, established in 1729, comes this extraordinary Palo Cortado from one of Alvear's oldest soleras. A rare and remarkable wine that begins life as a Fino but evolves to show the intensity and structure of an Oloroso while retaining the aromatic finesse of an Amontillado. Aged for a minimum of 20 years in American oak barrels using the traditional solera system, this represents one of the most prestigious expressions from the undisputed masters of Pedro Ximénez.
Tasting Notes
Deep mahogany color with brilliant copper highlights. The nose reveals intense complexity with aromas of dried fruits, toasted almonds, gingerbread, candied orange peel, and exotic wood notes. On the palate, it displays remarkable intensity and breadth with flavors of hazelnuts, oak spice, and the characteristic vinosidad of an Oloroso balanced by the delicate, piercing aromatics of an Amontillado. Pleasant citrus and saline sensations emerge on the finish, which lingers with elegant nuttiness.
Food Pairings
Smoked fish, game dishes, pickled foods, duck magret
