Born from tragedy into triumph, Akabu Shuzo rose from the ashes of the 2011 tsunami to create some of Japan's most compelling modern sake. Led by sixth-generation toji Ryunosuke Furudate and his young team of brewers, this Morioka-based brewery combines centuries-old Nanbu Toji traditions with contemporary techniques to craft sake that speaks to a new generation. Their philosophy is beautifully simple: don't overthink it, just enjoy.
Tasting Notes
This elegant junmai ginjo opens with a gentle bouquet of apple, honeydew melon, and sweet rice, complemented by delicate notes of pear and plum. Made with local Iwate Ginginga rice and polished to 50%, it delivers a silky, water-like texture with remarkable balance and finesse. Flavors of blueberry, grape, lychee, and melon dance across the palate, while subtle hints of vanilla and fresh almonds emerge as the sake warms. The finish is clean and refreshing with a pleasant acidity that invites another sip.
