Peychaud's Aromatic Bitters 5oz

2012 has been heralded as a “near perfect” vintage. No vineyard shows better evidence of this than Napa Valley’s renowned To Kalon. Under the watchful eye of their winemaker, Knights Bridge farmed this vineyard to yield low tonnage per acre in order to maximize the varietal’s essence. The 2012 take from To Kalon was a mere 8 tons.

The grapes were harvested early on October 18, 2012, destemmed and gently placed in tank. A cool fermentation lasting 14 days allowed the delicate esters to emerge and truly integrate into the developing wine. The wine was aged for 21 months in 100% new Darajou and Taransaud French oak cooperage and bottled, unfined and unfiltered.
