In 2002 Willy Pérez and his father Luis, a professor of oenology at the University of Cádiz, set up their bodega on a hill just northwest of Jerez. The wine is named after the Olaso Wharf, a historic docking dock built in 1911 in Sanlúcar de Barrameda that was demolished in 2005, and the winery wanted to perpetuate its memory with this exceptional white wine from the Land of Cádiz.\u003c\/p\u003e\n\u003ch3\u003eTasting Notes\u003c\/h3\u003e\u003cp\u003eOn the nose, it shows notes of tropical fruits such as bananas and pineapple, blended together with some fresher ones such as apple and pear. On the mouth, we can appreciate the sapid sensations typical of the El Corregidor estate in the Carrascal vineyard, which extends the wine in a long aftertaste. The manzanilla-like nose reveals herbal and nutty notes. Dry and chalky on the palate, the taut and refreshing mouthfeel lingers with a bakery flavor.
