The Fouassier family is one of the oldest winegrowing families in the village of Sancerre. Benoit and Paul Fouassier, cousins at the head of the estate today, are the 10th generation of Fouassier to have worked the estate's vines since 1742. The Fouassier family pioneered vinification by lieu-dit in the early 1980s and have transformed the domaine into a benchmark for biodynamic viticulture in the region. Their vineyard-first approach emphasizes biodiversity, soil health, and minimal intervention in the cellar, with a focus on showcasing the individuality of each terroir.
Tasting Notes
A rather discrete nose, hesitating between ripe fruit and stone, hovering between citrus, ripe white fruits and mineral notes. The palate is straight and slender, with ripe, impetuous substance followed by a savory, persistent, fresh and intense finish. Despite being wholly produced in stainless steel, this wine shows lightly spiced characteristics with white pepper and nutty notes. The nose reveals florals, honey and ripe lemon notes with a lees-derived biscuit-like character, opening with Fuji apple, star fruit and dried white blossom followed by a twist of lemon zest.
