From the pioneering Avignonesi estate in Montepulciano, owned by Belgian visionary Virginie Saverys who has transformed the property into Italy's largest biodynamic winery. The Da-Di project represents a return to ancient winemaking traditions, where 100% Sangiovese is fermented and aged exclusively in handcrafted Tuscan terracotta amphorae. This pure expression showcases the estate's commitment to terroir and sustainability, creating wines that embody the essence of their unique Tuscan soils.
Tasting Notes
Opens with intense aromas of cherry, ripe raspberries, and currants harmoniously intertwined with rosolio and wild strawberry notes. Sweet spices of cinnamon and star anise add complexity to the bouquet. The palate is viscous, dense, and vibrant with explosive red fruit flavors - morello cherry and black cherry straightforward and sincere. Well-present tannins spread across the lips, recalling the real and tenacious character of Tuscan Sangiovese. The finish achieves perfect balance between freshness and sweetness, a hallmark of terracotta aging.
Food Pairings
Tuscan grilled meats, wild boar ragu, aged Pecorino Toscano, roasted vegetables with herbs
